Chilled Gazpacho

Lucca's signature summer soup.

  • 5 large ripe tomatoes, peeled, seeded and chopped
  • 2 cucumbers, peeled, seeded and diced
  • 1 red bell pepper, seeded and diced
  • 1 red onion, peeled and thinly sliced
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 cup rice wine vinegar
  • 2 cups tomato juice
  • Tabasco sauce

Place first 4 ingredients into a food processor and puree.

Pour contents into a large bowl.

Add the rest of the ingredients in order.

Add two dashes of Tabasco sauce or more, if spicier taste is desired.

Chill for 4 hours to 1 day before serving.  Serves 4.
